How to Cook a Buffalo Steak with a Steak Rub
1. Thaw steak overnight in the refrigerator or in a bowl of cold water (~2 hrs). Never defrost in the microwave
2. Prepare the rub or purchase one you like
Basic rub 1 tbs per side.
- Cracked black pepper
- Grey salt
- Cayenne
- Ground cumin
- Make sure ingredients are ground and mixed you’ll need ~ 2 tbs, set aside
3. Take steak out of package and briefly wash the steak with cold water.
4. Place steak on flat plate and let excess water run off. Pat the steak dry on both sides (paper towel) and place on a dry surface.
5. Liberally apply the rub to the surface of the steak and use your fingers to push the herbs and spices into the meat I find pushing vs. rubbing works better (try not to let the rub cake on your fingers). Do this for both sides
6. Grill or pan cook –make sure grill or pan is very hot. For a pan I put ~ 1tbs olive oil in.
7. Sear the steak. The key is getting a good sear. The surface needs to be very hot. Place the steak flat on the surface and DON’T touch it for a minimum of a 1 minute. You can tell the sear is good when you can move the steak on the
surface easily.
8. Sear the other side.
9. After searing turn the heat down low-medium, make sure steak is not over flames if on a grill, if using a pan don’t put a lid on.
10. Watch the surface of the steak when you see juices on the surface your almost ready to turn it (~ 3-5 minutes)
11. Turn the steak over when the juices roll off the top of the steak and fall into the pan (Gets louder)
12. Do the same for the other side.
13. Turn the steak over once more and turn the heat off.
14. Let the steak mature by letting it sit for ~ 5 minutes in the pan or grill to continue cooking and cool off a bit.
This method of watching and listening for the juices results in a medium steak, grey on the outside and slightly pink on the inside. Cook it longer if you want the inside grey and shorter if you want it red on the inside. Try not to cut it open to check the inside when the steak is being cooked b/c all the juices will run out.
